Settings.app already kind of does this, the hiding of system apps, with Parental Restrictions. You can turn of Safari, Youtube, iTunes, App Store and the Camera app from appearing. These apps are obviously not uninstalled but instead just hidden. Why not add in a few more of those System apps then ?
